It is located 400 meters from the Relais des Halles. It is a house founded in 1894, an institution. It is a restaurant where you can taste foie gras in all its forms and it is also a very well-stocked delicatessen where you can buy foie gras and other delicacies. We have tested for you.
Reservations are essential because the address is well known. The place is decorated in a Parisian brasserie spirit and is divided without partition into a delicatessen and a restaurant, as one can see in Italy.
Half of the restaurant’s menu is devoted to dishes based on foie gras, from the semi-cooked duck foie gras terrine, to the pan-fried foie gras escalope with gingerbread, the foie gras carpaccio with honey, balsamic caramel and Guérande salt, and other appetizing suggestions…
We start with an organic «œuf cocotte» with duck foie gras and mushrooms that we will accompany with a Malbec Cahors. It’s a good wine but it turned out to be a bad choice because it was too robust and tannic for the delicacy of the dishes we had chosen. A fruity white wine would have been a better choice.
The «œuf cocotte» is an egg cooked in a bain-marie and preheated with fresh cream, in this case with veal stock and mushrooms. The dish is served warm. One will have in heart to taste it with the very good bread which is served.
We continue then with ravioles of foie gras of duck to the cream of truffle. It is very fine.
We close this beautiful walk with a Paris-Brest house whose choux pastry is a real delight. We would have liked a praline a little more affirmed in the cream.
In summary, it is a very well interpreted cuisine, interesting for those who want to discover foie gras in different forms without being exclusive. The service is diligent and attentive and the setting pleasant.
The restaurant is not the only interest of the place. Its delicatessen is very well stocked. You will be welcomed and very well advised by Hippolyte.
The house offers a wide range of fresh, semi-cooked or canned foie gras. All the processed products are made in the laboratory under the store. The foie gras comes from a cooperative located in Montfort en Chalosse which groups together the production of 80 family farms where the animals are raised in the moors, in the open air.
The comptoir de la Gastronomie also offers a beautiful assortment of salmon, sliced and prepared in the laboratory, as well as Baeri caviars from French sturgeon farms located in the Dordogne, and an Iranian Beluga caviar.
Finally, if you have the opportunity to reheat dishes, you will find sweets like the bouchée à la reine, which Hippolyte particularly recommends.
